Giovanni Canonica is a revered winemaker based in the town of Barolo, Piedmont, Italy. Together with his family, he operates a small agriturismo, with wine production taking place in the cellars beneath their home.

Canonica's approach to viticulture is deeply rooted in traditional and minimal-intervention methods. He cultivates just under three hectares of vineyards, primarily in the Paiagallo cru, located on the hillside above Barolo, and a smaller plot in Grinzane Cavour.
In the vineyard, he eschews the use of herbicides, pesticides, and fertilizers, relying solely on sulfur and copper treatments to maintain vine health. In the cellar, Canonica employs time-honored techniques, including destemming, extended maceration periods of 30 to 40 days with indigenous yeasts, and aging in cement tanks and large Slavonian oak casks. His production is notably limited, with approximately 6,000 bottles released annually, making his wines highly sought after by enthusiasts worldwide.
Canonica's portfolio features two Barolo wines: the Barolo Paiagallo and the Barolo del Comune di Grinzane Cavour, each reflecting the unique terroir of their respective vineyards. Despite the modest size of his operation, Canonica has garnered a dedicated following, with his wines often selling out rapidly upon release.
