The Heri-Hodie Premier Cru is an organic champagne made from spontaneously fermented base wines of the varieties
90% Meunier, 10% Pinot Noir and Chardonnay. The special feature: this sparkling was Solera
Process (as with sherry) composed - with wines that have been brought in since the 1995 harvest.
In the glass it is amber-colored with orange reflections. Iin the nose
Yeast dumpling, lots of pear and aniseed aromas - a very sensual and unusual impression. In the
Mouth, a lively and fine play of pearls takes place, accompanied by grated yellow apple,
herbal spices, caraway seeds, Earl Grey tea and lots of racy acidity reminiscent of Apple cider.
The combination appears noble and mixes the whole homely earthiness with a lively counterpoint.
